Choc Peanut Butter Protein Bars

One of my favourite things to do on a Sunday is to create a healthy snack for the week. However, this week my snack only made it to Tuesday. These Choc Peanut Butter Protein Bars are just so moreish that I had to keep going back for more. But they really do make the perfect pre or post-workout snack, dessert, on-the-go snack, or even breakfast. 

 

Peanut butter cups have always been one of my favourite treats, and that’s what inspired these delicious bars. They provide a healthy dose of protein and nutrients while tasting like dessert! 

Made with only six simple ingredients, and there’s no baking required. You really can’t go wrong!

 

Serves 6

15 minutes, plus 2 hour setting time

 

 

For the bars:

 

1 cup oats, blended into flour

1/4 cup vanilla protein powder

1/4 cup coconut oil, melted

1/4 cup honey or maple syrup

1/2 cup smooth peanut butter

1/3 cup chocolate chips, optional

 

For the topping

80g dark chocolate

1 tsp coconut oil

 

Line a loaf or slice tin with baking paper. Add all of the bar ingredients to a large bowl and mix well. 

Tip the mixture into the loaf tin, and press down the mixture, so the bars are an even shape. Place in the fridge while you make the topping. 

Melt your chocolate and coconut oil together. Pour over the top of the bars and place back in the fridge or freezer to set for 2 hours.

 

 

Tip - use a hot knife to cut the bars, so the chocolate doesn’t crack.
