Let’s be honest. 2021 wasn’t too much fun for some of us, but thankfully Christmas is on its way! So let’s get in the Christmas spirit with this delicious reindeer cookies – just like Santa’s gift list, they’re a little naughty and a little nice.

 

 

The cookie is a delicious mix of protein and healthy fats to support your body’s continual repair and growth. Protein also comes with the added benefit of stabilising blood sugars and helping you feel full, so you won’t be snacking all day, every day. Plus, who can pass up peanut butter flavour anything, am I right? These make the perfect Christmas table treat for friends and family.

 

 

Reindeer Cookies (make 10-12)

 

Ingredients

Choc-coated mini pretzels

Jaffa chocolates

1 ¼ cup crunchy peanut butter

3 TBS vanilla protein powder

1 egg

3 TBS maple syrup

 

 

Directions

  1. Preheat oven to 165C fan forced and line a baking tray.
  2. Combine peanut butter, protein powder, egg and maple syrup in a bowl. Mix until it forms a fudge like consistency that can be easily rolled.
  3. Scoop out and using a rolling pin to roll flat to about 1cm thick. Then using a gingerbread man (or just free hand into round biscuits), cut out reindeers, trimming the legs off the gingerbread man shape to form the head.

  1. Press in one jaffa for the nose.
  2. Bake for 10-12mins.
  3. Remove from oven and whilst still warm, gently press two pretzels for the horns.

  1. Allow to cool.
  2. Make a small amount of vanilla icing by combining icing sugar and water, spoon into a piping bag (or small bag with tip cut) and pipe on two eyes.
